I finally decided to dive into making easy Chocolate Brownie Cookies. I wanted a delicious chocolate cookie that only took a few ingredients and was made with pantry staples.

This year we are really focused on creating recipes using pantry staples and a few ingredients. This past year has taught us that there are weeks we may not be able to get to the grocery store or get the ingredients we really want so it is important to have different options for baking and recipes.

We have been making cake mix cookies for years. Have you tried these chocolate chip cake mix cookies, Lemon cake mix cookies, and red velvet cake mix cookies?

It was pretty funny when I went to the grocery store and loaded up on brownie mixes. I also bought a few cake mixes for an upcoming recipe post and the cashier commented that I must be doing a lot of baking.

I told her I was turning brownie mixes into cookies, cake mixes into something fun, and angel food cake into lemon bars and she looked at me like I had lost my mind. lol

Why stick to what the mix was created for when you can go crazy and turn them into other delicious baked goods.

One of the things I LOVE about these brownie cookies from a box mix is just how darn easy they are to make. I like to tease my husband that these are the perfect cookies for him to make.

I shared earlier this week how his favorite recipe is Bisquick Waffles. He is great at making them and they always turn out fantastic. I need to expand his recipe repertoire and get him started on a few new things.

Ingredients Needed

Brownie Mix - You can choose whatever kind of brownie mix you love. I used a Ghiradelli chocolate brownie mix because we love the flavor of Ghiradelli. You can also use a Betty Crocker mix or other brands.

Egg

Vegetable Oil

Optional add-ins - chocolate chips, nuts, peanut butter chips, or sprinkles.

Equipment Needed

Baking Sheet - I like to use baking sheets with sides so there is no way I can be clumsy and have the cookies slide right off into the oven {not that I want to admit that it has happened but I did learn my lesson.}

Parchment Paper - I love that I can use parchment paper to help make it easier to remove the brownie cookies. They also make clean-up a breeze. If you are not using parchment paper you will want to spray non-stick cooking spray on your baking sheet to help the cookies not stick.

Hand Mixer - I am a huge fan of using a hand mixer to get everything mixed together while baking. This dough is thick so a hand mixer makes it a lot easier to work with.

Large Mixing Bowl - We are big fans of this glass batter bowl that has a handle. It makes it easy to mix ingredients and keeps the mixing bowl steady on the counter.

Cookie Scoop - Cookie scoops are the perfect tool to make sure you get even cookies.

Cooling Rack - A cooling rack is a great way to cool the cookies down.

Recipe Tips

If you like fudgier brownies you can add 1 additional egg yolk to the mix. This will make the brownie cookies a bit softer and taste more like the chewy center of a brownie.

This dough is thick! I like to use a spatula to scoop any brownie mix off of the bottom of the bowl and press it into the dough when I am mixing everything together. This helps incorporate all of the ingredients.

You can add in chocolate chips if you want even more chocolate flavor in your brownie cookies.

These cookies take between 9-10 minutes baking time depending on your oven. I set my oven for 9 minutes and then check to see if they are done. I like crunchier edges so sometimes I leave them in for a bit longer cook time.

I have not tried making these with a gluten-free box of brownie mix yet so I am not sure if the times or temperature will need to be adjusted. I am hoping to make them soon.

Don't forget to preheat the oven.

These would be epic turned into brownie cookie ice cream sandwiches. Squish some vanilla bean ice cream between two cookies and hello yum!
