Make delicious peanut clusters in just a few minutes in the microwave! With just 4g net carbs in each serving, these are truly amazing.
Are Peanuts Keto
Peanuts are a debated food on the keto diet because they are higher in carbs than other types of nuts. A typical serving of peanuts has about 5g carbs and 15.5g fat. The best thing to do is look at your macros for the day and decide whether the peanuts fit into your numbers.
For most people, one of these peanut clusters will fit in with their macros just fine.
If you enjoy the taste and crunch of peanuts, then you will really enjoy this low-carb peanut pasta. It’s made with palmini noodles and tastes a lot like pad Thai!
Keto Peanut Clusters
There are a few different desserts that are quintessentially holiday treats. This includes classics like cranberry cheesecake or orange cranberry bread. Peanut clusters are another traditional holiday dessert.
Set them out on the snack table when you have guests come over and they will eat them up!
Clusters of salty peanuts covered in decadent sugar-free dark chocolate, there is nothing like it! They don’t have any strange sugar-free aftertaste. In fact, these are popular treats that kids love to eat too!
Microwave Peanut Clusters
These keto peanut clusters are a lot of fun to customize with your kids too. Sprinkle some sea salt on top before the chocolate hardens. Or, use white chocolate chips instead of dark chocolate. Kids can also add their favorite sugar-free sprinkles, or mix in some sugar-free marshmallows.
It might also be fun to drizzle some keto-friendly melted caramel on top.
The most difficult thing about these peanut clusters is waiting for them to harden. Everything else is really simple!
Low-Carb Chocolate Peanut Clusters
Give a tin of homemade peanut clusters as a DIY foodie gift. I love to place them in a decorated tray or Christmas-themed food storage container. Almost everyone loves chocolate and peanuts!
Be careful when you melt chocolate chips in the microwave. Heat the bowl up for just 30 seconds at a time and stir the chocolate chips really well in between each interval. This will help distribute the heat better and prevent the chocolate from scalding.
You can also make a homemade double broiler and melt them that way. Boil about 1-2 inches of water in a small saucepan. When the water is boiling, add the chocolate chips to a large glass mixing bowl and place the mixing bowl inside the saucepan.
If the bowl is large enough, it should perch above the boiling water. Then, stir the chocolate chips until they are completely melted.
Either option works for these easy keto peanut clusters.
Best Keto Chocolate Chips
My favorite type of sugar-free chocolate chips is made from Lily’s. They have a really rich and real flavor. You can’t even tell they are made without real sugar!
