Step 1: Scrub potatoes and cut them into 1-inch pieces.

Step 2: Fill a large bowl or pot with cold water. Place the potatoes in the water, let soak for at least 30 minutes up to overnight.

Step 3: While potatoes soak, in a small bowl mix, whisk together to combine the olive oil, smoked paprika, onion powder, garlic powder, salt, and pepper.

Step 4: After soaking, use a colander to drain the potatoes and dry them completely. A cotton towel works very well to dry the potatoes.

Step 5: Spray a large rimmed baking sheet with non-stick cooking spray. Set aside.

Step 5: Drizzle the olive oil mixture over the potatoes and gently stir to ensure they are well covered with the seasoning. Spread the potatoes in a single layer on the prepared baking sheet. Roast at 425°F for about 40 minutes, flipping them halfway through. They are fork-tender when cooked completely.

Storage

Storing Raw Potatoes: Store in a cool dry place but not in the fridge. A pantry shelf is good.

Leftovers should be stored in an airtight covered container in the refrigerator for up to 3 days. Reheat in the oven at 375°F for about 15 minutes, or until warmed through.

Freezer-friendly: When you have an excess of potatoes that need to be used. Make a batch or two of this recipe and freeze them for later. Place the baked roasted potatoes on a large baking sheet in the freezer for about 30 minutes. This prevents them from sticking together. Then, move the frozen potato wedges to a freezer-safe bag and keep in the freezer for up to 3 to 4 months. They can be reheated from frozen in the oven at 350°F until warmed through, about 15 minutes.

Variations

Do you want to change up this recipe? Here are some ways that you increase the flavor of this dish.

Adjust the potato seasoning and try some of these:

  • Greek flavor - add some oregano and marjoram for variety.
  • Homemade Cajun Seasonings: a delicious homemade blend that enhances the flavor.
  • Homemade Seasoning Salt: we use this seasoning often as it is a staple in my pantry and it is always delicious and flavorful.
  • Herbes de Provence: a great blend of flavor.
  • Italian Seasoning: we use this often and it gives a nice Tuscan flavor.
  • Fresh garlic and parmesan cheese would be a fabulous combination for great-tasting crispy potatoes.
  • Fresh Rosemary and garlic would be an awesome combo for this recipe.

Expert Tips

  • Use a rimmed roasting pan and don't overcrowd the pan. Overcrowding can cause the potatoes to steam and they won't crisp. No one wants soggy potatoes.
  • Roasting potatoes at a higher temperature will ensure crispy potatoes with a tender and fluffy interior.
  • For really easy clean-up, use parchment paper on the baking sheet and spray the paper with non-stick spray.
  • Peeling the potatoes is not necessary. Wash the potato skin well before cutting potatoes into even size chunks.
  • Make evenly cut pieces of potato, so they roast at the same rate.
  • Feel free to make ahead and reheat at 375°F wrapped in aluminum foil for about 10 minutes.
  • It is extremely important to soak the potatoes to remove excess starch to ensure the best crispy roast potatoes.
  • Also very important to completely dry the potatoes before seasoning. We use a cotton towel to dry the potatoes.

Frequently Asked Questions

What are the best potatoes to use for oven roasting?

My favorite potatoes for oven roasting are Idaho, Yukon, red, or fingerling potatoes.

Can I use any other oil besides olive oil?

Absolutely, you can use any of your favorites such as avocado, canola, grapeseed, or coconut oil.

What is the best temperature to roast potatoes in the oven?

A high temperature in the oven gives a crispy outside and a soft interior. I recommend 425°F oven temperature for extra crispy roasted potatoes.

Can I use this recipe for sweet potatoes?

Absolutely, this is a great recipe and sweet potatoes would work wonderfully.

Can I use soft potatoes that have some green on them?

Unfortunately, if they are soft and green, discard them. Those taters are no longer good.

Why aren't my roasted potatoes crispy?

Be sure to dry off the potatoes before adding the seasoning. Also, do not crowd the pan. Give the potato wedges enough space so they have room to roast. If the potatoes are too close together they will steam and not be crispy.

Why are my roasted potatoes soggy?

Overcrowding the pan can cause the steaming of the potatoes and they will be soggy, not crispy. Be sure to spread the potatoes out on the sheet pan.

Should I boil the potatoes before roasting them?

No. Soaking the potatoes in cold water for 30 minutes does the trick to guarantee crispy potatoes. I've tested and retested this method and also boiling first. No need to boil the potatoes first.

FAQs

Why can't i get my roast potatoes crispy? ›

Preheat the fat. While the potatoes parboil, add the oil or butter to the roasting pan, transfer it to the warm oven, and heat it for about 5 minutes before adding the potatoes. This allows the outside of the potatoes to crisp up nicely and not just absorb the cold fat when you put them in the oven.

How to keep roast potatoes crispy in the oven? ›

Keep potatoes crisp in a warm oven if you're serving them in 1-2 hours. If there is a slight wait before everyone eats, don't cover the crispy potatoes—this traps steam which will make the potatoes soggy. Just keep them in the oven, but turn the temperature to the lowest setting.

Is it necessary to boil potatoes before roasting? ›

Do I have to boil potatoes before roasting? Not necessary but this can help get the perfect consistency and crispiness. Make sure you boil them but leave them a bit al dente and they will crisp up perfectly in the oven.

Why does vinegar make potatoes crispy? ›

The acid in the vinegar can also help to slightly break down the surface of the potatoes, aiding in the development of a crispier texture during frying. Additionally, the vinegar can contribute to a golden-brown color on the exterior of the fries.

What is the best oil for roasting potatoes? ›

Neutral, low-cost oil such as vegetable oil, canola oil, safflower oil, peanut oil, corn oil, coconut oil, avocado oil, etc., work well for roasting. These oils have a high smoke point, allowing the potatoes to get very hot to achieve maximum crispiness.

Why does soaking potatoes make them crispier? ›

Soaking the sliced potatoes in water helps to draw out some of the starch from the middle of the potato, resulting in a sturdier, crispier French fry.

Why put potatoes in cold water before roasting? ›

Soaking potatoes in water helps remove excess starch. Excess starch can inhibit the potatoes from cooking evenly as well as creating a gummy or sticky texture on the outside of your potatoes. Cold water is used because hot water would react with the starch activating it, making it harder to separate from the potatoes.

How to re-crisp roast potatoes? ›

Heat your oven to 400 degrees, spread potatoes on a sheet pan and cover them in tin foil. Re-roast them until they're warm all the way through, about 10-15 minutes. Remove the cover for another five to add crispiness.

Can you put too much oil in roast potatoes? ›

Roasted potatoes can become soggy if the water content in the potato isn't fully cooked. Different potatoes have different water content percentages. Also, be mindful of the oil. Potatoes can react like sponges; too much oil can make your potatoes appear to be soggy.

Which type of potatoes are best for roasting? ›

Russet potatoes will produce crisper crusts and fluffier centers. Yukon Golds will be slightly less crisp and have creamier centers, with a darker color and deeper flavor. You can also use a mix of the two. The potatoes should be cut into very large chunks, at least 2 to 3 inches or so.

How does Gordon Ramsay cook roast potatoes? ›

Carefully add the potatoes to the hot tray along with the garlic and rosemary. Toss to coat in the fat and spread out in a single layer so they cook evenly. Roast for 40-45 minutes, turning every 15 minutes, until crisp and golden brown. Season with sea salt and freshly ground black pepper to serve.

Should potatoes be salted before roasting? ›

We tasted the potatoes and agreed that post-salting is better than pre-salting. Salting before or after clearly makes a difference. The outside of the post-salted potatoes is more crispy and has a nice bite to it, whereas the outside of the pre-salted potatoes is tough and leathery.

Why don't my roast potatoes go crispy? ›

To make crispy roast potatoes, the temperature of the oven needs to be hot. What is this? If the oven is too hot the potatoes will burn before they crisp up. If the oven temperature is too cold your potatoes will not be crispy.

Why won't my potatoes get crispy in oil? ›

A: This sure sounds a lot like potatoes that have been stored too long, in too cold of an environment before cooking. When potatoes are held below 41°F for too long a period, the starches convert to sugar and it changes the cooking chemistry.

Why soak potatoes in baking soda? ›

I first came across this trick from a post on Serious Eats – baking soda creates an alkaline environment for the potatoes to boil in, which maximises the starch so our roast potatoes are extra crispy! Swish the potatoes around your colander after boiling.

Why are my potatoes still crunchy after cooking? ›

If the potato cubes were too large or unevenly cut, this might result in some pieces remaining crunchy. Crockpot Temperature: Crockpots can cook at varying temperatures, even on the same setting. Why do my roast potatoes take so long to cook? ›

If you're cooking the potatoes after they've been in the fridge, the cooking time may be a little longer than normal as the potatoes will be cold. If you are cooking a whole roast dinner and are in and out of the oven you may find your roasties take a little longer.

Why aren't my baked potatoes crispy? ›

If you oil them up early, the skins may not turn crispy. The salt, too, can run off the potatoes in the heat. Instead, do a quick oil baste after the potatoes reach 205°F: Remove the pan from the oven. Brush with olive oil (or bacon grease if you have it) and a hefty sprinkle of kosher salt.
